Year 10 Practical Exam Excellence

The Year 10 Food Prep students cooked an amazing range of Italian themed dishes to show off their culinary skills as part of their NEA 2 mock exam.

The students completed two dishes and two side accompaniments within a 2 hour period.  They had to make all aspects of the dishes from fresh raw ingredients and demonstrate a range of technical skills from deboning meat/fish, making homemade pasta; spaghetti, tagliatelle, ravioli, cappelletti, cake or pastry making or sauces like mayonnaise, hollandaise or a class roux white bechamel sauce.

All cleaning up and presentation of the dishes had to be completed within the 2 hour time frame and they had to show how they could dovetail four different recipes, managing their time and working both hygienically and safely.

I was so proud of the students efforts and how they executed this challenge so professionally. On tasting and assessing the dishes, it was like being in an Italian restaurant!

All of the dishes were authentic to Italian cuisine and presented to the highest standard.  I look forward to what they are going to produce in the final Year 11 practical exam!

Making the decision of who should receive the top outstanding excellence award was certainly a challenge for the food teachers and technicians...
